Easy chocolate brownies

  1. 200g chocolate (85% cacao or homemade)
  2. 130g raw Medjool dates, pitted
  3. 180g organic cold-pressed coconut oil
  4. 30g coconut flour
  5. 4 eggs
  6. 1/4 tsp sea salt
  7. pinch of cinnamon

Preheat oven to 190C. Line a 20cm square baking dish with baking paper.
Melt the chocolate and coconut oil over low heat.
Chop Medjool dates in a food processor.
Add melted chocolate and the rest of ingredients and pulse everything until well combined.
Scrape mixture into a lined, square baking dish.
Bake in preheated 190C oven for 15-18 mins - be careful not to overcook.
Keep in the fridge for up to a week.
