Easy and Delicious Quinoa Chocolate Cake (Gwen's favourite :))
Ingredients
- 2 cups cooked quinoa (3/4 cup uncooked)
- 3/4 cup coconut milk (or 1 tbs of coconut butter dissolved in 3/4 cup of water)
- 4 whole eggs
- seeds of 1 vanilla bean
- 120g melted butter
- 100g melted coconut oil
- 1/4 cup maca
- 1/4 cup mesquite
- 1/2 cup carob powder
- 3/4 cup unsweetened cocoa powder
- 1 tbs raw honey (optional)
- 1/2 teaspoon baking soda
- 1 and 1/2 teaspoon baking powder
Chocolate frosting
- 150g cream
- 100g melted dark chocolate (85%)
- 2 tbs coconut oil
- 1 tbs salted butter, melted
- 2 drops of frankincense essential oil (optional)
- 1 tbs brain octane oil (optional)
OR for something less 'chocolaty'
Coconut Butter Blackberry Frosting
- 150g coconut butter, softened
- 100g coconut oil, softened
- seeds of 1 vanilla bean
- 30g freeze dried blackberry powder (you can use any other type of freeze dried berries or acai powder or maqui powder)
- 2 tbs lemon juice
- 1 tsp raw honey (optional)
- 3-4 tbs brain octane oil (optional)
*To make cooked quinoa, soak 3/4 cup of well rinsed quinoa for 12 hrs in water with 1 tbs of apple cider vinegar. Rinse, and add it together with 1.5 cups of water to small pot. Bring to a boil, cover then turn to low and simmer for 15-20 minutes. Let stand 5-10 minutes*
- Preheat the oven to 120°C and line a cake pan with parchment paper.
- In a food processor or blender, combine the eggs, coconut milk, honey (if using) and vanilla, and gently blend to combine.
- Add the cooked quinoa along with the melted and cooled butter and coconut oil. Blend until completely smooth, about a minute.
- Sift together the dry ingredients in a large bowl (cocoa powder, maca, mesquite, carob, baking powder, baking soda.)
- Add the dry ingredients to the blender/food processor and pulse until completely mixed. Use a spatula to scrape down the sides.
- Pour the batter in the pan and bake for about 120 minutes. Remove the cake from the oven and allow to cool.
- To make Frosting: Mix all the ingredients in high power blender. Frost the cake immediately as coconut oil firms up quickly.
