*To make cooked quinoa, soak 3/4 cup of well rinsed quinoa for 12 hrs in water with 1 tbs of apple cider vinegar. Rinse, and add it together with 1.5 cups of water to small pot. Bring to a boil, cover then turn to low and simmer for 15-20 minutes. Let stand 5-10 minutes*

  1. Preheat the oven to 120°C and line a cake pan with parchment paper.
  2. In a food processor or blender, combine the eggs, coconut milk, honey (if using) and vanilla, and gently blend to combine.
  3. Add the cooked quinoa along with the melted and cooled butter and coconut oil. Blend until completely smooth, about a minute.
  4. Sift together the dry ingredients in a large bowl (cocoa powder, maca, mesquite, carob, baking powder, baking soda.)
  5. Add the dry ingredients to the blender/food processor and pulse until completely mixed. Use a spatula to scrape down the sides.
  6. Pour the batter in the pan and bake for about 120 minutes. Remove the cake from the oven and allow to cool.
  7. To make Frosting: Mix all the ingredients in high power blender. Frost the cake immediately as coconut oil firms up quickly.
